LIME PUDDING CAKE

¼ Cup flour
1 Cup sugar
¼ teaspoon salt
1 teaspoon grated lime rind
¼ Cup lime juice
1 C. milk
2 egg yolks, beaten
2 egg whites, stiffly beaten
1 Cup sugar

Preheat oven to 350 degrees. Sift flour, sugar, and salt together into a mixing bowl. Stir in lime rind, lime juice, egg yolks, and milk. Fold in stiffly beaten egg whites. Pour into 1 quart baking dish, 6½ inches. Set in a pan of hot water 1 inch deep. Bake at 350 °F for 50 minutes. Serve warm or cold. Serves 6 to 8.
